What postulate or theorem should be used to prove the triangles are congruent?

AAS (angle angle side) This is because you know the vertex angles are congruent along with the congruent angles shown to you. The vertex ones are the two angles where the triangles meet, they are always congruent. So you have that angle, the angel given congruent, and the congruent side. Again: AAS
